A food television personality in Argentina, Mexico, Puerto Rico, guest chef in numerous US shows and has written three books Rum & Cooking, PR True Flavors and Salty Sweet. He’s served as a consultant and advisor to many including AEG, CIA, Sodexo and others. Pikayo, his flagship restaurant for 28 years until 2017 was awarded Best Museum Restaurant in the World by the NYT in 2002. One of his missions is uplifting and preserving the core of Puerto Rico's simple and delicious fare through technique and better sourced ingredients.
